couscous salad (magoo)

couscous salad
Recipe type: salad
  • 1 cup couscous (instant style, readily available anywhere)
  • ¼ cup chopped onion
  • ¼ cup chopped cucumber
  • ¼ cup chopped nuts (pistachios, cashews, a mix, or your favourite)
  • ⅛ cup chopped dried fruit (I used apricots)
  1. Mix all ingredients in a bowl and cover with 1.5 cups boiling water. Let sit while you make the dressing:
  2. tbsp orange juice
  3. Juice of ½ lemon
  4. /2 tsp sugar
  5. clove garlic, finely grated
  6. tbsp olive oil
  7. /2 tsp vinegar
  8. Salt and pepper
  9. When the couscous has absorbed the water, add the dressing and stir. Leave to sit for a while before serving.
